Baum2The Cretan olive trees, there are not two of them equal – each of them tend and cultivated, grows up and became an individual and this already goes on since thousand of years. His leaves spending shade all over summer and his fruits give us healthy food (pickled olives and pastes) as well as olive oil. The Cretan olive oil is one of the best, maybe indeed the best olive oil in the world. In the older days it was used also to light the dark ours of the nights and still now its used in all the little churches and chapels on Crete, to admire and worship the holy Icons – a little piece of cork, into it a tiny little wick (fixed with a small clip), swimming on top of the olive oil which is filled in a small glass.

After the oil production in winter, the sorted out leaves are feed for the goats what makes their meat so incomparable soft and tasty. Oh heaven, if goats won’t exist, I had become a vegetarian long ago! In winter and beginning of spring the olive trees are pruned and this long burning wood became charcoal for happy summer parties with barbeque or is used for the open fire to warm our evenings all winter long. A number of people, holding a piece of wood in the hand to throw it into the fire place may have watched it before from all ankles discovering figures and creatures which could have lived in the tree. The most dexterous among them started to carve and have build art-objects out of olive wood.
Did I forget something? Right, the trash from oil production will be pressed again to make non-irritant soap and not enough, the last trash, filled into sacks, comes into modern heading systems of new homes. Burned into wood ashes, the very rest will be used at the fields as manure.
